So I have been packing my bags. My holidays are finally here and I have been itching to get away for a short while for so long. Now the time is here. We’ll be exploring England for the next 10 days and I shall be coming back with my “British Weeks” to introduce some lovely bakes from the Victoria Sponge Country to you. Well, I guess it’ll be trying to introduce them, as I haven’t got much experience with the lovely British bakes. But hey, learning by doing, right?
So because it is actually way too long to not be in touch (10 days seem like an eternity to be away from my lovely blogger friends) I thought I’ll say farewell with these delicious lemon soaked lemon muffins.
The temperature has reached a new yearly high (30° and climbing today) and I personally find there is nothing better to cool down than lemon dishes, drinks and bakes. Because these little yokes (yes, my boyfriend is Irish) are soaked in a mix of lemon juice and icing sugar, they stay moist for a long time. Scrumdideliumptous!!!
125g all-purpose flour
1/2 teaspoon baking powder
1 pinch of salt
50g icing sugar
1. Stir butter until soft.
2. Add sugar and eggs and stir until creamy.
3. Grate the zest of on one lemon into the mix.
4. Now add the flour, baking powder and salt and combine.
5. Fill the mix into the form.
Bake in a preheated oven at 180° for about 20 minutes.
Prepare the icing by combining 0.5 dl lemon juice and 50g icing sugar. Pierce the cooled cakes with a needle several times and drizzle the icing on top of it. This way it’ll soak the inside with the icing as well.
So farewell for a short time and keep on baking friends. I shall be eating and tasting for the next 10 days in gorgeous England. If I can access some WIFI I will share some of the wonderful experiences with you. And once again thank you sooo much for all those lovely birthday wishes, I did have a blast and am still enjoying to be spoilt (how lucky am I?)
